Description

A delightful Greek dish combining succulent chicken thighs with orzo pasta in a zesty lemon broth, perfect for any occasion.


Ingredients

  • 4 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season the chicken thighs on both sides with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat and brown the chicken thighs for 4–5 minutes on each side.
  3. Remove the chicken and set aside on a plate.
  4. Add the chopped onion to the skillet and sauté for about 3–4 minutes until soft.
  5. Stir in the minced garlic, oregano, and thyme and sauté for 1 minute.
  6. Pour in the orzo, chicken broth, lemon juice, and lemon zest, and stir to combine.
  7. Return the browned chicken to the skillet, cover, and simmer for 15–20 minutes.
  8. Check the chicken for doneness; slice or shred and return it to the skillet, then stir in the parsley.
  9. Taste and adjust salt and pepper as needed.
  10. Serve the dish hot, garnished with parsley and lemon wedges.

Notes

Feel free to substitute chicken thighs with chicken breasts for a leaner option. Fresh herbs can enhance the flavor further.
