- 4 boneless skinless chicken thighs
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 cup orzo pasta
- 2 cups chicken broth
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest
- Salt to taste
- Freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the chicken thighs on both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat and brown the chicken thighs for 4–5 minutes on each side.
- Remove the chicken and set aside on a plate.
- Add the chopped onion to the skillet and sauté for about 3–4 minutes until soft.
- Stir in the minced garlic, oregano, and thyme and sauté for 1 minute.
- Pour in the orzo, chicken broth, lemon juice, and lemon zest, and stir to combine.
- Return the browned chicken to the skillet, cover, and simmer for 15–20 minutes.
- Check the chicken for doneness; slice or shred and return it to the skillet, then stir in the parsley.
- Taste and adjust salt and pepper as needed.
- Serve the dish hot, garnished with parsley and lemon wedges.
Notes
Feel free to substitute chicken thighs with chicken breasts for a leaner option. Fresh herbs can enhance the flavor further.
