- 4 chicken breasts
- 1 cup orzo pasta
- 1/4 cup lemon juice
- 4 cups chicken broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Fresh herbs (like parsley and dill), chopped
- Salt and pepper to taste
Instructions
- Prepare the Chicken: Start by heating olive oil in a large pot over medium heat. While the oil heats up, season both sides of the chicken breasts with salt and pepper. Once the oil is hot, add the chicken breasts to the pot.
- Brown the Chicken: Cook the chicken for about 5-7 minutes on each side until golden-brown and fully cooked. Remove it from the pot and set it aside.
- Sauté the Garlic: In the same pot, add the minced garlic and sauté for about 30 seconds until fragrant.
- Toast the Orzo: Add the orzo pasta to the pot and stir well with the garlic. Cook for 2-3 minutes until lightly toasted.
- Add Liquid: Pour in the chicken broth and lemon juice. Stir well and bring to a boil.
- Combine Ingredients: Once boiling, return the chicken to the pot, making sure it’s submerged in the liquids.
- Simmer: Reduce heat to low and cover the pot. Let it simmer for about 15-20 minutes until the orzo is tender and the flavors blend.
- Finish with Herbs: Just before serving, stir in the chopped fresh herbs.
Notes
For visual appeal, top with extra herbs and lemon wedges before serving.
