Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Wash the baby potatoes thoroughly and cut them in half.
  2. Finely mince the garlic.
  3. In a bowl, rub the chicken breasts with olive oil and season with Italian seasoning, salt, black pepper, and red pepper flakes.
  4. Place the halved potatoes at the bottom of the crockpot.
  5. Pour the chicken broth over the chicken and potatoes.
  6. Sprinkle the minced garlic and grated parmesan cheese evenly on top.
  7. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  8. Check the chicken’s temperature to ensure it has reached 165°F (75°C) and that the potatoes are tender.
  9. Serve hot and garnish with chopped parsley if desired.
