Ingredients
2 cups frozen pineapple chunks
1/2 cup coconut milk (or any plant milk)
2 tbsp maple syrup or honey (optional)
1 tsp vanilla extract
Optional toppings: shredded coconut, chopped pineapple, or mint leaves
Instructions
1. Place frozen pineapple chunks, coconut milk, maple syrup (if using), and vanilla extract into a high-speed blender or food processor.
2. Blend until smooth and creamy, scraping down the sides as needed.
3. Taste and adjust sweetness if desired.
4. Serve immediately for soft-serve style ice cream, or transfer to a container and freeze for 1–2 hours for firmer texture.
5. Top with shredded coconut, extra pineapple, or mint leaves if desired.

Notes
For a creamier texture, use full-fat coconut milk.
