Description
Delicious mini pancake bites that are perfect for kids’ breakfasts or brunch. Quick, easy, and fun to make, these bite-sized pancakes are sure to please the whole family.
Ingredients
1 cup all-purpose flour
2 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup milk
1 large egg
2 tbsp melted butter
1 tsp vanilla extract
Optional: chocolate chips, blueberries, or mini marshmallows
Instructions
1. Preheat a mini muffin tin and lightly grease with butter or nonstick spray.
2. In a medium bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3. In another bowl, combine milk, egg, melted butter, and vanilla extract.
4. Pour wet ingredients into dry ingredients and mix until just combined.
5. Spoon batter into mini muffin tin, filling each cup about 3/4 full.
6. Add optional mix-ins like chocolate chips or blueberries.
7. Bake at 350°F (175°C) for 12–15 minutes, until golden and a toothpick comes out clean.
8. Cool slightly before serving. Serve warm with syrup or toppings of choice.
Notes
Do not overmix batter to keep pancake bites fluffy.
Can be made ahead and stored in an airtight container for up to 2 days.
Reheat gently in the microwave or oven before serving.
