- 1 box chocolate cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 can (12 oz) evaporated milk
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1 cup granulated sugar
- 1 cup chocolate frosting
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13 inch cake pan.
- Mix the chocolate cake mix, water, vegetable oil, and eggs in a large mixing bowl until smooth.
- Bake for 25 to 30 minutes until a toothpick inserted comes out clean.
- Cool the cake for 10 minutes before poking holes throughout.
- Prepare the coconut-pecan topping by cooking evaporated milk, sugar, coconut, and pecans over medium heat for 5 to 7 minutes.
- Soak the warm mixture into the poked cake and let it cool completely.
- Frost the cooled cake with chocolate frosting.
- Chill in the refrigerator for at least 1 hour before serving.
- Cut into squares and serve, optionally garnished with extra coconut or berries.
Notes
For a twist, try cream cheese frosting instead of chocolate.
