- 1 can (15 ounces) of corn, drained
- 1 can (14.5 ounces) of diced tomatoes
- 1 packet of taco seasoning
- 1 cup of shredded cheese (cheddar or Mexican blend)
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
- Tortilla chips or taco shells for serving
Instructions
- Cook the beef: In a large skillet, over medium heat, add the ground beef. Break it up with a spatula as it cooks. Season it with a pinch of salt and pepper. Cook until browned, about 5-7 minutes.
- Add onions and garlic: Once the beef is browned, add the chopped onion and minced garlic. Cook for about 3-4 minutes until the onion is translucent.
- Mix in beans and corn: Stir in the black beans and corn, mixing well.
- Add tomatoes and seasoning: Pour in the diced tomatoes and sprinkle the taco seasoning. Stir to combine all ingredients.
- Simmer: Lower the heat and let it simmer for about 10 minutes, stirring occasionally. This step helps the flavors blend together.
- Melt cheese: Turn off the heat and sprinkle the shredded cheese on top. Cover the skillet to let the cheese melt, which will take just a few minutes.
- Garnish: Garnish with cilantro if you wish. This adds a nice fresh touch.
- Serve: Serve the mixture in taco shells or with tortilla chips. You can also add extra toppings like sour cream, salsa, or avocado if desired.
