Ingredients

  • 1 pound of ground beef
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 can (15 ounces) of black beans, drained and rinsed
  • 1 can (15 ounces) of corn, drained
  • 1 can (14.5 ounces) of diced tomatoes
  • 1 packet of taco seasoning
  • 1 cup of shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Tortilla chips or taco shells for serving

Instructions

  1. Cook the beef: In a large skillet, over medium heat, add the ground beef. Break it up with a spatula as it cooks. Season it with a pinch of salt and pepper. Cook until browned, about 5-7 minutes.
  2. Add onions and garlic: Once the beef is browned, add the chopped onion and minced garlic. Cook for about 3-4 minutes until the onion is translucent.
  3. Mix in beans and corn: Stir in the black beans and corn, mixing well.
  4. Add tomatoes and seasoning: Pour in the diced tomatoes and sprinkle the taco seasoning. Stir to combine all ingredients.
  5. Simmer: Lower the heat and let it simmer for about 10 minutes, stirring occasionally. This step helps the flavors blend together.
  6. Melt cheese: Turn off the heat and sprinkle the shredded cheese on top. Cover the skillet to let the cheese melt, which will take just a few minutes.
  7. Garnish: Garnish with cilantro if you wish. This adds a nice fresh touch.
  8. Serve: Serve the mixture in taco shells or with tortilla chips. You can also add extra toppings like sour cream, salsa, or avocado if desired.
