Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 34 medium ripe bananas, mashed
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it with butter or non-stick spray.
  3. Cream together the softened butter and granulated sugar in a medium bowl until light and fluffy.
  4. Add the two large eggs into the mixture and mix until combined.
  5. Mash the ripe bananas in a separate bowl until smooth.
  6. Combine the mashed bananas and vanilla extract with the butter mixture.
  7. Sift together the flour, baking soda, and salt in another bowl.
  8. Combine the dry ingredients with the wet banana mixture, mixing just until combined.
  9. Transfer the batter to the prepared loaf pan and smooth the top.
  10. Bake for about 60 minutes, checking for doneness with a toothpick.
  11. Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Notes

For a more moist banana bread, consider adding a package of instant banana pudding mix to the dry ingredients. Store at room temperature for 3-4 days, or freeze for up to 3 months.
