- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 2 cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 3–4 medium ripe bananas, mashed
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9×5-inch loaf pan by greasing it with butter or non-stick spray.
- Cream together the softened butter and granulated sugar in a medium bowl until light and fluffy.
- Add the two large eggs into the mixture and mix until combined.
- Mash the ripe bananas in a separate bowl until smooth.
- Combine the mashed bananas and vanilla extract with the butter mixture.
- Sift together the flour, baking soda, and salt in another bowl.
- Combine the dry ingredients with the wet banana mixture, mixing just until combined.
- Transfer the batter to the prepared loaf pan and smooth the top.
- Bake for about 60 minutes, checking for doneness with a toothpick.
- Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
Notes
For a more moist banana bread, consider adding a package of instant banana pudding mix to the dry ingredients. Store at room temperature for 3-4 days, or freeze for up to 3 months.
