A simplified and delicious version of classic lasagna cooked in a slow cooker, perfect for busy weeknights and gatherings.
Ingredients

- 1 pound extra-lean ground beef (or ground turkey)
- 1 yellow onion (or white onions/shallots)
- 3 cloves garlic (freshly minced)
- 1 jar jarred tomato sauce
- 9 sheets lasagna noodles (oven-ready or regular)
- 15 ounces ricotta cheese (or cottage cheese)
- 3 cups mozzarella cheese
- 1 bunch fresh basil (or fresh parsley)
Instructions
- Chop the onion into small pieces and mince the garlic finely.
- In a skillet over medium heat, brown the ground beef or turkey, stirring occasionally. Add chopped onion and minced garlic and cook until the onion is soft and translucent. Drain any excess fat.
- Pour in the jar of tomato sauce and stir. Let it simmer for about 5 minutes.
- In the crockpot, layer the ingredients starting with a layer of meat sauce, followed by lasagna noodles, ricotta cheese, mozzarella cheese, and fresh basil. Repeat layers until all ingredients are used, finishing with a final layer of mozzarella cheese.
- Cover the crockpot and set it to low, cooking for about 4 to 6 hours.
- After cooking, let the lasagna rest for 10-15 minutes before serving. Cut into squares to serve.
Notes
Consider adding Italian herbs to the meat mixture and using oven-ready noodles to prevent sogginess.
