  • 2 tablespoons flour
  • 2 teaspoons Italian seasoning
  • 2 cups chicken broth
  • 21/4 cups whole milk
  • 11/2 cups uncooked orzo pasta
  • 1 cup finely grated Parmesan cheese
  • 3 cups coarsely chopped baby spinach
  • 2 large lemons (1 tablespoon zest and 1/4 cup juice)

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add the finely diced onion and cook for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the diced chicken, season with salt and pepper, and cook for 5 to 7 minutes until browned.
  5. Stir in the butter until melted.
  6. Add the flour and stir well to coat.
  7. Mix in the Italian seasoning.
  8. Pour in the chicken broth and whole milk, bringing to a gentle simmer.
  9. Incorporate the uncooked orzo and cook for 8 to 10 minutes until tender.
  10. Finish by stirring in the Parmesan cheese, spinach, lemon zest, and lemon juice.
  11. Adjust seasoning to taste before serving warm.
