Description

  • 2 pounds chicken thighs (boneless, skinless, cut into bite-sized pieces)
  • 4 medium potatoes (peeled and diced)
  • 3 carrots (sliced)
  • 2 stalks celery (diced)
  • 1 onion (chopped)
  • 4 cloves garlic (minced)
  • 1 cup frozen peas
  • 4 cups chicken broth (low-sodium recommended)
  • 1 teaspoon thyme (dried)
  • 1 teaspoon rosemary (dried)
  • 1 bay leaf
  • Salt (to taste)
  • Pepper (to taste)
  • 3 tablespoons olive oil (for sautéing)
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Prep the vegetables: Peel and dice the potatoes, slice the carrots, dice the celery, and chop the onion. Mince the garlic and set aside.
  2. Sauté the aromatics: Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Combine ingredients: Stir in the minced garlic and sauté for another minute until fragrant. Transfer the sautéed onions and garlic into the slow cooker.
  4. Add chicken & veggies: Toss in the diced chicken thighs along with the diced potatoes, sliced carrots, and diced celery. Stir to combine.
  5. Pour in the broth: Carefully pour in the chicken broth, ensuring all ingredients are submerged.
  6. Season to taste: Sprinkle in the thyme and rosemary, adding salt and pepper to your liking.
  7. Slow cook: Cover and cook on low for 6-8 hours or high for 4-5 hours until chicken is tender.
  8. Add peas: In the last 30 minutes, stir in the frozen peas.
  9. Thicken if desired: Mix cornstarch with water and stir into the stew during the last moments of cooking.
  10. Finishing touches: Remove the bay leaf and adjust seasonings if needed. Ladle into bowls and garnish with fresh herbs if desired.
