Description

Ingredients

  • 4 cups Broccoli florets
  • 1 cup Carrots, chopped
  • 1/2 tbsp Garlic, minced
  • 1 cup Onion, chopped
  • 4 cups Vegetable broth
  • 1/2 tsp Black pepper
  • 1/2 cup Flour
  • 1/4 tsp Paprika
  • 1/2 tsp Salt
  • 5 tbsp Butter, salted
  • 2 cups Cheddar cheese, shredded
  • 1 cup Half and half
  • 1 cup Milk

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Sauté the chopped onion, minced garlic, and carrots until softened, about 5-7 minutes.
  3. Add the flour, paprika, black pepper, and salt; cook for an additional minute.
  4. Pour in the vegetable broth while stirring continuously.
  5. Cook the broccoli florets in the mixture until tender, about 10 minutes.
  6. Reduce the heat and stir in the milk and half-and-half.
  7. Add the shredded cheddar cheese and stir until melted and creamy.
  8. Taste and adjust seasoning if needed before serving.
