- 4 cups Broccoli florets
- 1 cup Carrots, chopped
- 1/2 tbsp Garlic, minced
- 1 cup Onion, chopped
- 4 cups Vegetable broth
- 1/2 tsp Black pepper
- 1/2 cup Flour
- 1/4 tsp Paprika
- 1/2 tsp Salt
- 5 tbsp Butter, salted
- 2 cups Cheddar cheese, shredded
- 1 cup Half and half
- 1 cup Milk
Instructions
- Melt the butter in a large pot over medium heat.
- Sauté the chopped onion, minced garlic, and carrots until softened, about 5-7 minutes.
- Add the flour, paprika, black pepper, and salt; cook for an additional minute.
- Pour in the vegetable broth while stirring continuously.
- Cook the broccoli florets in the mixture until tender, about 10 minutes.
- Reduce the heat and stir in the milk and half-and-half.
- Add the shredded cheddar cheese and stir until melted and creamy.
- Taste and adjust seasoning if needed before serving.
Notes
Serve warm with crusty bread or crackers for a comforting meal.
