Ingredients

- 1 lb chicken breasts, cubed
- 2 cups rice (white or brown)
- 4 cups chicken broth
- 1 cup cream of mushroom soup
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the cubed chicken, rice, chicken broth, cream of mushroom soup, mixed vegetables, chopped onion, minced garlic, salt, black pepper, and paprika in a large casserole dish.
- Stir well to ensure even coating of the chicken and distribution of rice.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Uncover and stir the mixture; if desired, sprinkle cheese on top.
- Bake uncovered for an additional 15-20 minutes or until the cheese is melted and bubbly.
- Serve warm and enjoy with a side salad or crusty bread.
Notes
Great with added herbs or different cheese varieties. Can be prepared in advance and stored in the fridge.
