Description

A comforting and creamy chicken and rice casserole that’s perfect for family dinners and gatherings.


Ingredients

  • 1 lb chicken breasts, cubed
  • 2 cups rice (white or brown)
  • 4 cups chicken broth
  • 1 cup cream of mushroom soup
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the cubed chicken, rice, chicken broth, cream of mushroom soup, mixed vegetables, chopped onion, minced garlic, salt, black pepper, and paprika in a large casserole dish.
  3. Stir well to ensure even coating of the chicken and distribution of rice.
  4. Cover the dish with aluminum foil and bake for 45 minutes.
  5. Uncover and stir the mixture; if desired, sprinkle cheese on top.
  6. Bake uncovered for an additional 15-20 minutes or until the cheese is melted and bubbly.
  7. Serve warm and enjoy with a side salad or crusty bread.

Notes

Great with added herbs or different cheese varieties. Can be prepared in advance and stored in the fridge.
