  • 8 oz pasta (penne or fettuccine)
  • 1 tbsp olive oil
  • 1 lb chicken breast, diced
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook the pasta by boiling water in a large pot. Once boiling, add the pasta and cook according to package instructions (about 8-10 minutes). Drain and set aside.
  2. Prepare the chicken by heating olive oil in a large skillet over medium heat. Add the diced chicken and cook for 6-8 minutes until browned and cooked through.
  3. Add the sliced bell pepper and zucchini to the skillet and sauté for 3-4 minutes. Then toss in the cherry tomatoes and broccoli florets, cooking until tender (about 5-7 minutes).
  4. Add the minced garlic and cook for another minute until fragrant, ensuring it doesn’t burn.
  5. Combine everything by adding the cooked pasta and mixing well with chicken and vegetables. Season with salt and pepper to taste.
  6. Serve on plates, topped with freshly grated Parmesan cheese.

Notes
