- 8 oz pasta (penne or fettuccine)
- 1 tbsp olive oil
- 1 lb chicken breast, diced
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the pasta by boiling water in a large pot. Once boiling, add the pasta and cook according to package instructions (about 8-10 minutes). Drain and set aside.
- Prepare the chicken by heating olive oil in a large skillet over medium heat. Add the diced chicken and cook for 6-8 minutes until browned and cooked through.
- Add the sliced bell pepper and zucchini to the skillet and sauté for 3-4 minutes. Then toss in the cherry tomatoes and broccoli florets, cooking until tender (about 5-7 minutes).
- Add the minced garlic and cook for another minute until fragrant, ensuring it doesn’t burn.
- Combine everything by adding the cooked pasta and mixing well with chicken and vegetables. Season with salt and pepper to taste.
- Serve on plates, topped with freshly grated Parmesan cheese.
