Description
A hearty and creamy chicken avocado burrito packed with tender chicken, fresh avocado, melted cheese, and zesty spices. Perfect for a quick lunch, dinner, or meal prep favorite!
Ingredients
2 large flour tortillas (10-inch)
2 cups cooked shredded chicken (rotisserie works great)
1 large ripe avocado, diced
1/2 cup shredded cheddar or Monterey Jack cheese
1/4 cup sour cream
1/4 cup salsa (optional)
1 tbsp fresh lime juice
1 tbsp olive oil
1/2 tsp chili powder
1/2 tsp cumin
1/4 tsp garlic powder
1/4 tsp salt
2 tbsp chopped fresh cilantro
Instructions
1. In a mixing bowl, combine shredded chicken with chili powder, cumin, garlic powder, salt, and lime juice. Toss well.
2. Heat a skillet over medium heat, add olive oil, and warm the chicken mixture for 3–4 minutes.
3. Lay tortillas flat. Spread sour cream in the center of each tortilla.
4. Add seasoned chicken, diced avocado, shredded cheese, salsa, and cilantro.
5. Fold in the sides, then roll tightly into burritos.
6. Heat the skillet again, place burritos seam-side down, and toast 2–3 minutes per side until golden brown and crispy.
7. Slice in half and serve warm with extra salsa or sour cream.
Notes
For a healthier option, use whole wheat tortillas.
You can prep ahead: wrap burritos in foil and store in the fridge for up to 3 days or freeze for up to a month.
