- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 cup grated carrots
- 1/2 cup chopped walnuts or pecans
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and prepare a jelly roll pan with parchment paper.
- Combine the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt in a bowl.
- Beat the eggs and granulated sugar in a large mixing bowl until thick and pale, about 3-5 minutes.
- Mix the dry ingredients gradually into the egg mixture until just combined.
- Fold in the grated carrots and chopped walnuts or pecans.
- Pour the batter into the prepared jelly roll pan and spread evenly.
- Bake for 13-15 minutes until golden brown and a toothpick comes out clean.
- Prepare a clean kitchen towel dusted with powdered sugar.
- Invert the cake onto the towel and remove the parchment paper.
- Roll the cake with the towel inside and let it cool completely.
- Beat together the cream cheese, softened butter, powdered sugar, and vanilla extract until smooth for the filling.
- Unroll the cake and spread the cream cheese filling evenly.
- Re-roll the cake without the towel and refrigerate for at least 1 hour before slicing.
Notes
Serve with extra cream cheese frosting or whipped cream. Store wrapped in plastic in the refrigerator for up to a week.
