Description

A light and fluffy Carrot Cake Roll filled with cream cheese frosting, perfect for celebrations and gatherings.


Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup grated carrots
  • 1 teaspoon vanilla extract
  • 1/2 cup cream cheese
  • 1/4 cup butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 15×10 inch jelly roll pan and line it with parchment paper.
  3. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Beat the eggs and sugar together until thick and light in color.
  5. Stir in the grated carrots and 1 teaspoon of vanilla extract.
  6. Gradually mix in the dry ingredients until just combined.
  7. Pour the batter into the prepared pan and spread it evenly.
  8. Bake for 15-20 minutes until the center springs back when touched gently.
  9. Roll up the cake while warm using the parchment paper, and let it cool.
  10. Beat the cream cheese and butter until creamy, then add powdered sugar and remaining vanilla extract to make frosting.
  11. Unroll the cake, spread the frosting over it, and roll it back up carefully.
  12. Slice and serve your delightful Carrot Cake Roll!
