- 3 large eggs

- 1 cup grated carrots
- 1 teaspoon vanilla extract
- 1/2 cup cream cheese
- 1/4 cup butter
- 2 cups powdered sugar
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 15×10 inch jelly roll pan and line it with parchment paper.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Beat the eggs and sugar together until thick and light in color.
- Stir in the grated carrots and 1 teaspoon of vanilla extract.
- Gradually mix in the dry ingredients until just combined.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 15-20 minutes until the center springs back when touched gently.
- Roll up the cake while warm using the parchment paper, and let it cool.
- Beat the cream cheese and butter until creamy, then add powdered sugar and remaining vanilla extract to make frosting.
- Unroll the cake, spread the frosting over it, and roll it back up carefully.
