Rich and creamy cheesecake layered with tender spiced apples and drizzled with caramel – the ultimate fall dessert for cozy gatherings.
Ingredients
For the crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the cheesecake filling:
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
For the apple topping:
2 medium apples, peeled, cored, and diced
2 tbsp butter
2 tbsp brown sugar
1/2 tsp ground cinnamon
For the caramel drizzle:
1/2 cup caramel sauce
Instructions
1. Preheat oven to 325°F (160°C) and grease a 9-inch springform pan.
2. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 8–10 minutes. Let cool.
3. Prepare cheesecake filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla, cinnamon, and nutmeg. Mix until creamy.
4. Pour cheesecake filling over cooled crust.
5. Prepare apple topping: In a skillet, melt butter and sauté apples with brown sugar and cinnamon until tender, about 5–7 minutes.
6. Spread apple mixture over cheesecake filling.
7. Bake for 45–50 minutes, until the center is almost set (slightly jiggly is okay).
8. Cool to room temperature, then refrigerate for at least 4 hours.
9. Before serving, drizzle with caramel sauce.
Notes
For extra flavor, sprinkle chopped pecans over the caramel topping.
Make ahead: can be prepared a day in advance and stored in the refrigerator.
Serve chilled with whipped cream for an indulgent fall dessert.
