Description

Ingredients

  • 4 tablespoons (56g) unsalted butter
  • 2 cups (240g) all-purpose flour
  • ¼ cup (32g) cornstarch
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 ½ cups (360ml) buttermilk
  • ¾ cup (180ml) milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle maker according to the manufacturer’s instructions.
  2. Melt the unsalted butter over low heat and let it cool slightly.
  3. Mix the all-purpose flour, cornstarch, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  4. Whisk together the eggs, buttermilk, milk, and vanilla extract in a separate bowl. Slowly whisk in the cooled melted butter.
  5. Combine the wet and dry ingredients gently until just mixed; a few lumps are okay.
  6. Cook the batter in the preheated waffle maker according to its instructions until golden brown.
  7. Serve warm or keep them in an oven at 200°F (93°C) until ready to enjoy.

Notes

Waffles are best served fresh with various toppings such as maple syrup, fresh fruits, or whipped cream. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
