- 8 ounces spaghetti
- 2 cups broccoli florets
- 2 chicken thighs, boneless and skinless
- 1 cup light cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: garlic powder
- Optional: grated parmesan
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken thighs with olive oil, salt, pepper, and optional garlic powder.
- Place the seasoned chicken in a baking dish and bake for about 25 to 30 minutes.
- Boil a large pot of salted water and cook the spaghetti according to package instructions.
- In the last 3-4 minutes of cooking, add the broccoli florets to the pot.
- Drain the spaghetti and broccoli together and return to the pot.
- Remove the chicken from the oven, let it cool, and then shred into bite-sized pieces.
- Add the shredded chicken and light cheese to the pot, mixing until the cheese melts.
- Serve hot, optionally garnished with grated parmesan.
