Description

A simple and delicious dish combining tender chicken, fresh broccoli, and spaghetti, perfect for busy weeknights.


Ingredients

  • 8 ounces spaghetti
  • 2 cups broccoli florets
  • 2 chicken thighs, boneless and skinless
  • 1 cup light cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: garlic powder
  • Optional: grated parmesan

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs with olive oil, salt, pepper, and optional garlic powder.
  3. Place the seasoned chicken in a baking dish and bake for about 25 to 30 minutes.
  4. Boil a large pot of salted water and cook the spaghetti according to package instructions.
  5. In the last 3-4 minutes of cooking, add the broccoli florets to the pot.
  6. Drain the spaghetti and broccoli together and return to the pot.
  7. Remove the chicken from the oven, let it cool, and then shred into bite-sized pieces.
  8. Add the shredded chicken and light cheese to the pot, mixing until the cheese melts.
  9. Serve hot, optionally garnished with grated parmesan.
