Description
A delicious and hearty vegetable lasagna made with layers of cheese, spinach, and marinara sauce.

- 9 lasagna noodles
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 3 cups spinach, chopped
- 2 cups marinara sauce
- 1 egg
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions.
- Mix the ricotta cheese, egg, Italian seasoning, salt, and pepper in a bowl.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Add three lasagna noodles over the sauce.
- Layer half of the ricotta mixture, half of the spinach, and one-third of the mozzarella cheese on top.
- Repeat the layers, finishing with noodles and marinara sauce.
- Top with the remaining mozzarella and Parmesan cheese.
- Bake for 30-35 minutes until bubbly and golden.
- Let it cool for 10 minutes before serving.
Notes
For a richer flavor, add some sautéed mushrooms or bell peppers to the filling.
