Ingredients

  • 6 Hard-Boiled Eggs
  • 1/4 cup Mayonnaise
  • 1/4 cup finely chopped Dill Pickles
  • 1 tablespoon Dill Pickle Juice
  • 2 tablespoons finely minced Fresh Dill
  • 1 teaspoon Dijon Mustard
  • Salt to taste
  • Freshly Ground Black Pepper to taste

Instructions

  1. Prepare Your Hard-Boiled Eggs: Start by boiling the eggs. Place them in a pot and cover them with water, making sure there’s about an inch of water above the eggs. Bring the water to a rolling boil, then turn off the heat. Allow the eggs to sit in the hot water for around 12-15 minutes. Once cooked, transfer the eggs to an ice bath for 10-15 minutes to cool down.
  2. Halve the Eggs and Scoop the Yolks: Once the eggs have cooled, gently tap each egg on a hard surface and roll it to crack the shell. Peel the eggs under running water to remove any stubborn bits of shell. With a sharp knife, slice each egg in half lengthwise. Carefully scoop out the yolks and place them in a mixing bowl. Set the egg whites aside.
  3. Mash the Yolks: Using a fork, mash the yolks until they are mostly smooth but still have a few small lumps.
  4. Incorporate the Dill Pickle Flavors and Creamy Base: To the mashed yolks, add the mayonnaise, finely chopped dill pickles, dill pickle juice, fresh dill, and Dijon mustard. Stir everything together until well combined.
  5. Season and Mix the Filling: Add salt and freshly ground black pepper to taste and mix until smooth and integrated.
  6. Taste and Adjust: Taste the filling and add more dill pickle juice, salt, or pepper if needed.
  7. Fill the Egg Whites: Spoon or pipe the filling back into the egg whites.
  8. Garnish and Serve: Garnish with fresh dill, chopped dill pickle, or paprika. Serve immediately or refrigerate.
