- 1/2 medium yellow onion, finely chopped
- 1/3 cup all-purpose flour
- 2 cups low sodium chicken stock
- 2 cups whole milk
- To taste: salt and black pepper
- 2 1/2 cups broccoli florets, chopped small
- 1 stalk celery, finely diced
- 2 cups sharp cheddar cheese, freshly shredded
- 1 cup extra shredded cheddar for garnish (optional)
Instructions
- Melt the butter in a large pot over medium heat.
- Cook the finely chopped onion for 4 to 5 minutes until soft and translucent.
- Whisk in the flour and cook for 1 to 2 minutes until lightly golden.
- Add the chicken stock while whisking to prevent lumps.
- Incorporate the celery and broccoli, bring to a gentle boil, then reduce heat and simmer for 12 to 15 minutes until broccoli is tender.
- Combine with the milk and simmer for another 2 to 3 minutes until slightly thickened.
- Add the cheddar cheese gradually, stirring until melted.
- Adjust seasoning with salt and pepper to taste.
- Serve warm, garnished with extra cheddar cheese if desired.
