Description

A creamy and cheesy broccoli cheddar soup that’s easy to make and perfect for chilly evenings.


Ingredients

  • 5 tablespoons unsalted butter
  • 1/2 medium yellow onion, finely chopped
  • 1/3 cup all-purpose flour
  • 2 cups low sodium chicken stock
  • 2 cups whole milk
  • To taste: salt and black pepper
  • 2 1/2 cups broccoli florets, chopped small
  • 1 stalk celery, finely diced
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup extra shredded cheddar for garnish (optional)

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Cook the finely chopped onion for 4 to 5 minutes until soft and translucent.
  3. Whisk in the flour and cook for 1 to 2 minutes until lightly golden.
  4. Add the chicken stock while whisking to prevent lumps.
  5. Incorporate the celery and broccoli, bring to a gentle boil, then reduce heat and simmer for 12 to 15 minutes until broccoli is tender.
  6. Combine with the milk and simmer for another 2 to 3 minutes until slightly thickened.
  7. Add the cheddar cheese gradually, stirring until melted.
  8. Adjust seasoning with salt and pepper to taste.
  9. Serve warm, garnished with extra cheddar cheese if desired.
