- 2 cups crushed digestive biscuits or graham crackers
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup fresh strawberries, diced
- 1/2 cup strawberry puree
- Optional: additional strawberries for topping
Instructions
- Preheat your oven to 325°F (160°C).
- Combine the crushed digestive biscuits with the melted butter in a mixing bowl.
- Press the biscuit mixture into the bottom of a springform pan.
- Beat the softened cream cheese with the powdered sugar and vanilla extract until smooth.
- Whip the heavy cream in a separate bowl until soft peaks form.
- Fold the whipped cream into the cream cheese mixture, then add the diced strawberries and strawberry puree.
- Pour the filling over the prepared crust in the springform pan.
- Refrigerate the cheesecake for at least 4 hours, or overnight, until set.
- Remove the cheesecake from the springform pan and top with additional strawberries if desired.
