Description

A creamy cheesecake bursting with fresh strawberry flavor and a crunchy biscuit base, perfect for impressing family and friends.


Ingredients

  • 2 cups crushed digestive biscuits or graham crackers
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup fresh strawberries, diced
  • 1/2 cup strawberry puree
  • Optional: additional strawberries for topping

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the crushed digestive biscuits with the melted butter in a mixing bowl.
  3. Press the biscuit mixture into the bottom of a springform pan.
  4. Beat the softened cream cheese with the powdered sugar and vanilla extract until smooth.
  5. Whip the heavy cream in a separate bowl until soft peaks form.
  6. Fold the whipped cream into the cream cheese mixture, then add the diced strawberries and strawberry puree.
  7. Pour the filling over the prepared crust in the springform pan.
  8. Refrigerate the cheesecake for at least 4 hours, or overnight, until set.
  9. Remove the cheesecake from the springform pan and top with additional strawberries if desired.
