- 6 large eggs
- 1 ripe avocado
- 1 tablespoon mayonnaise (optional)
- 1 teaspoon Dijon mustard
- 1 teaspoon lime juice
- Salt, to taste
- Pepper, to taste
- Paprika, for garnish
- Chopped fresh cilantro or chives, for garnish (optional)
Instructions
- Start by placing the eggs in a pot and covering them with cold water. Ensure there’s about an inch of water above the eggs.
- Bring the water to a boil over medium-high heat. Once it boils, cover the pot and remove it from heat. Let the eggs sit in hot water for 9-12 minutes.
- Carefully drain the hot water and transfer the eggs to a bowl of ice water. Let them cool for at least 5 minutes.
- Once the eggs are cool, tap them gently on a hard surface to crack the shell. Peel the eggs under running water to make it easier to remove the shells.
- Slice the eggs in half lengthwise and remove the yolks. Place the yolks in a mixing bowl.
- Add the ripe avocado, mayonnaise (if using), Dijon mustard, lime juice, salt, and pepper to the yolks. Mash everything together until smooth and creamy.
- Spoon the avocado mixture back into the hollowed egg whites. Use a piping bag for a prettier presentation if desired.
- Sprinkle paprika over the filled eggs for color. Add chopped cilantro or chives for extra flavor and color.
Notes
Choose ripe avocados for the best texture. Adjust seasonings to taste and feel free to add ingredients like bacon bits or jalapeños for variations.
