- 6 large eggs
- 1 ripe avocado
- 1 tablespoon lime juice
- Salt and pepper to taste
- Paprika for garnish
- Optional: diced tomatoes or cilantro for topping
Instructions
- Hard boil the eggs by placing them in a pot and covering with water. Bring to a boil over medium-high heat. Reduce heat and simmer for 9-12 minutes. Transfer to an ice bath to cool.
- Peel the eggs gently. Slice in half lengthwise and remove the yolks.
- Prepare the filling by mashing the yolks with avocado, lime juice, salt, and pepper until smooth.
- Fill the egg whites with the avocado mixture using a spoon or piping bag, creating a nice mound on top.
- Garnish with paprika and optional diced tomatoes or cilantro.
- Serve chilled or at room temperature.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2 days. To prevent browning, cover the filling with plastic wrap.
