A delightful twist on classic deviled eggs, combining creamy avocado with rich eggs for a nutritious snack.


Ingredients

  • 6 large eggs
  • 1 ripe avocado
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Paprika for garnish
  • Optional: diced tomatoes or cilantro for topping

Instructions

  1. Hard boil the eggs by placing them in a pot and covering with water. Bring to a boil over medium-high heat. Reduce heat and simmer for 9-12 minutes. Transfer to an ice bath to cool.
  2. Peel the eggs gently. Slice in half lengthwise and remove the yolks.
  3. Prepare the filling by mashing the yolks with avocado, lime juice, salt, and pepper until smooth.
  4. Fill the egg whites with the avocado mixture using a spoon or piping bag, creating a nice mound on top.
  5. Garnish with paprika and optional diced tomatoes or cilantro.
  6. Serve chilled or at room temperature.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. To prevent browning, cover the filling with plastic wrap.
