Description

Ingredients

1 cup rolled oats

1/2 cup pumpkin puree

1/4 cup almond butter or peanut butter

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp baking soda

Pinch of salt

Optional: 1/4 cup chocolate chips or raisins


Instructions

1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a medium bowl, mix pumpkin puree, almond butter, honey, and vanilla until smooth.

3. Add oats, cinnamon, nutmeg, baking soda, and salt. Stir until fully combined.

4. Fold in optional chocolate chips or raisins.

5. Scoop tablespoon-sized portions onto the prepared baking sheet and flatten slightly.

6. Bake for 12–15 minutes, until edges are set.

7. Cool completely before serving.

Notes

Use a cookie scoop for uniform cookies.

Can be stored in an airtight container for up to 4 days.

For a vegan option, use maple syrup and plant-based nut butter.
