Description

Ingredients

2 cups all-purpose flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 tsp ground nutmeg

1/4 tsp ground ginger

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 cup pumpkin puree

1 tsp vanilla extract

Cream cheese filling:

4 oz cream cheese, softened

2 tbsp sugar

1/2 tsp vanilla extract


Instructions

1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.

2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.

3. In a separate bowl, beat butter and sugar until fluffy. Add eggs, one at a time, then mix in pumpkin puree and vanilla.

4. Gradually fold dry ingredients into the wet mixture until combined.

5. Prepare cream cheese filling by mixing cream cheese, sugar, and vanilla until smooth.

6. Spoon half of the muffin batter into muffin cups, add a teaspoon of cream cheese filling, then top with remaining batter.

7. Bake for 20–25 minutes, until a toothpick inserted comes out clean.

8. Cool slightly before serving.

Notes

Do not overmix batter to keep muffins light.

Use canned or homemade pumpkin puree.

Can add chopped nuts or chocolate chips for variation.
