Ingredients
4 large flour tortillas
6 large eggs
1/2 cup shredded cheddar cheese
1/2 cup cooked breakfast sausage or bacon, crumbled
1/4 cup diced bell peppers
1/4 cup diced onions
Salt and pepper, to taste
Optional: salsa, avocado, hot sauce
Instructions
1. In a skillet, sauté diced bell peppers and onions until softened.
2. In a bowl, whisk eggs with salt and pepper, then scramble in the skillet with the vegetables until cooked through.
3. Lay out tortillas and divide scrambled eggs, cheese, and cooked sausage/bacon evenly among them.
4. Fold sides and roll up burritos tightly.
5. To make ahead, wrap individually in foil or plastic wrap and refrigerate for up to 2 days or freeze for up to 1 month.
6. Reheat in microwave or oven before serving. Add optional toppings like salsa or avocado.
