Make a quick and delicious homemade version of the classic Egg McMuffin. Perfect for breakfast on the go with eggs, Canadian bacon, and melted cheese on an English muffin.
Ingredients
2 English muffins, split
2 large eggs
2 slices Canadian bacon or ham
2 slices cheddar cheese
Butter for toasting muffins
Salt and pepper, to taste
Optional: hot sauce or ketchup
Instructions
1. Preheat a skillet or griddle over medium heat.
2. Split and lightly butter the English muffins, then toast until golden. Set aside.
3. Cook Canadian bacon or ham slices in the skillet for 1–2 minutes per side until slightly browned.
4. Lightly grease a round egg ring or small skillet and crack an egg inside. Cook to desired doneness (about 2–3 minutes for runny yolk or longer for fully cooked).
5. Season eggs with salt and pepper.
6. Assemble sandwiches by placing a slice of cheese on the bottom muffin, top with cooked egg and Canadian bacon, and finish with the top muffin.
7. Serve immediately.
Notes
You can make multiple sandwiches ahead and wrap for a quick breakfast.
Adjust egg doneness and cheese type to preference.
Optional toppings include spinach, tomato slices, or avocado.
