- 4 thick chicken breasts, skinless and boneless
- 4 tbsp yogurt
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1/2 tbsp tomato paste
- 1/2 tbsp Dijon mustard
- Zest of 1 lemon
- 1 tsp salt
- 1 tsp sweet paprika
- 1 tsp pul biber or extra paprika
- 1 tsp cumin
- 1 tsp dried parsley or Italian seasoning
- 1 tsp garlic granules
- 1/2 tsp pepper
Instructions
- Make shallow diagonal cuts about 1/4 inch deep on each chicken breast.
- Pat chicken breasts dry with a paper towel.
- Zest the lemon.
- In a container or ziplock bag, mix together yogurt, lemon juice, olive oil, tomato paste, Dijon mustard, lemon zest, salt, sweet paprika, pul biber, cumin, dried parsley or Italian seasoning, garlic granules, and pepper.
- Add chicken breasts to the marinade, ensuring they are well coated. Let it marinate for at least 30 minutes.
- Preheat your air fryer to 375°F (190°C).
- Line the air fryer basket with damp parchment paper.
- Place chicken breasts in the air fryer basket, scored side down.
- Cook for 10 minutes, then flip and cook for another 10 to 12 minutes, ensuring an internal temperature of 165°F (74°C).
- Remove the chicken from the air fryer and let it rest for 2 to 5 minutes before serving.
Notes
Letting the chicken marinate longer enhances flavor and juiciness. Always check the internal temperature to ensure it is safe to eat.
