Description

A delicious and hearty vegetable lasagna made with layers of cheese, spinach, and marinara sauce.


Ingredients

  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cups spinach, chopped
  • 2 cups marinara sauce
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Mix the ricotta cheese, egg, Italian seasoning, salt, and pepper in a bowl.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
  5. Add three lasagna noodles over the sauce.
  6. Layer half of the ricotta mixture, half of the spinach, and one-third of the mozzarella cheese on top.
  7. Repeat the layers, finishing with noodles and marinara sauce.
  8. Top with the remaining mozzarella and Parmesan cheese.
  9. Bake for 30-35 minutes until bubbly and golden.
  10. Let it cool for 10 minutes before serving.

Notes

For a richer flavor, add some sautéed mushrooms or bell peppers to the filling.
